1. What is fresh-milled flour?

  • Fresh-milled flour is made by grinding whole wheat berries into flour just before you receive it. Because it hasn't been sitting on a warehouse shelf for months, it retains the bran, germ, natural oils, aroma, and full flavor of the whole grain.

2. What makes it different from grocery store flour?

  • Most commercial flour is roller milled, separated into parts, and often stored for months before purchase. Fresh-milled flour contains the entire grain—the bran, germ, and endosperm—and is milled immediately before pickup for maximum freshness and flavor.

3. Is your flour organic?

  • Yes. I mill only premium USDA Organic wheat berries sourced from trusted American farms. Many of my grains are also Certified Glyphosate Residue Free.

4. Is it gluten-free?

  • No. All wheat varieties naturally contain gluten. I do not currently offer gluten-free grains because they would require separate equipment to prevent cross-contamination.

5. Why do some people tolerate fresh-milled flour better?

  • Many people report they feel better eating bread made from fresh-milled flour. While I can't make health claims, fresh-milled flour contains the entire grain and hasn't been stripped of the bran and germ like many commercial flours. Everyone's body is different.

6. Does fresh-milled flour bake differently?

  • Yes—a little. Because it contains the whole grain, it absorbs more water than white flour. Recipes sometimes require slightly more liquid and occasionally a longer hydration period. I'll be sharing recipes and baking tips to make the transition easy.

7. Can I substitute it for regular flour?

  • Usually, yes. Many recipes work well with a 1:1 substitution. For lighter baked goods like cakes, some people prefer one of my softer wheat blends. I'll gladly recommend the best flour for your recipe.

8. Which flour should I buy?

It depends on what you're making!

  • • Bread → Hard White or Hard Red Wheat

  • • Sandwich Bread → Signature Bread Blend

  • • Cookies → Soft White Wheat

  • • Cakes → Soft White Wheat

  • • Pancakes & Waffles → All-Purpose Blend

  • • Pizza → Bread Blend

  • • Pasta → Durum Wheat

  • • Tortillas → Soft White Blend

9. What are wheat berries?

  • Wheat berries are simply the whole kernels of wheat before they're milled into flour. Nothing has been added or removed.

10. How long does fresh-milled flour last?

  • Because it still contains the natural oils from the wheat germ, it is best used within:

    • 1–2 weeks at room temperature

    • About 3 months refrigerated

    • Up to 6 months frozen

  • Keeping it cool helps preserve freshness.

11. Do I have to refrigerate it?

  • Not immediately. If you'll use it within a week or two, pantry storage is fine. For longer storage, refrigeration or freezing is recommended.

12. Why don't grocery stores sell flour this fresh?

  • Fresh-milled flour has a shorter shelf life because it still contains the natural oils from the grain. Commercial flour is processed for long storage and nationwide distribution.

13. Do you mill to order?

  • Yes! Every order is milled just before pickup to ensure maximum freshness. I don't keep pre-milled inventory sitting on shelves.

14. How often do you mill?

  • Once every one to two weeks based on pre-orders and wheatberry availability.

15. Where are you located?

  • I'm located in Bar X Ranch near Angleton, Texas. Orders are pickup only at this time.

16. Do you deliver?

  • Not currently. At this time I'm offering scheduled porch pickup only.

17. Can I place a custom order?

  • Absolutely. If you need a special blend or a larger quantity, just send me a message. Larger orders will also receive discounted pricing.

18. Do you sell sourdough flour?

  • Yes! Several of my wheat varieties and signature blends work beautifully for sourdough baking. I can recommend one based on whether you prefer a lighter or heartier loaf.

19. Do you sell bread flour?

  • Yes. Hard White Wheat, Hard Red Wheat, and my Signature Bread Blend are excellent choices for yeast breads and sourdough.

20. What's your best-selling flour?

  • My personal favorite is my All-Purpose Blend. It's incredibly versatile and works well for everything from biscuits and pancakes to cookies and everyday baking.

21. Why is fresh-milled flour more expensive?

  • I mill each order individually using premium USDA Organic whole grains. You're receiving flour that's freshly milled specifically for you—not flour that has been sitting in storage for months.

22. Is your flour bleached?

  • No. Never.

  • My flour contains nothing but freshly milled whole grain.

  • No bleaching.

  • No bromates.

  • No preservatives.

  • No additives.

23. Is anything added to your flour?

  • No. One ingredient: Whole grain. That's it.

24. Why are there different colors of wheat?

Different wheat varieties have different flavors and baking characteristics.

  • Hard White: Mild flavor

  • Hard Red: Rich, hearty flavor

  • Soft White: Tender baked goods

  • Durum: Pasta

  • Einkorn: Ancient grain

  • Spelt: Nutty flavor

  • Khorasan (Kamut®): Buttery, rich taste

25. Can I grind my own flour?

  • Absolutely! Many families enjoy milling at home. For those who don't own a grain mill—or simply prefer the convenience—I'm happy to do the milling for you using the same premium whole grains.

26. Do you have recipes?

  • Yes! I'll be sharing recipes, baking tips, sourdough ideas, and milling education regularly on my page.

27. Can I request a flour that's not on your menu?

  • Absolutely. If I can source the grain, I'd be happy to mill it for you.
